Jan D'Atri .. 3 ingredient challenge

Jan D'Atri joins us every Monday at 8:05 for Beth & Friends & Food ... last week Vinnie
challenged her to come up with a 3-ingredient quickie recipe ... Here's her reply ..

"Ok Gang...this was the most fun I've had cookin' in a while!

I did a 3-Ingredient Pasta in a Mug. Delish and so easy it's ridiculous.

I also did a 3-Ingredient Pulled Pork. Delish and so easy, too!!

I did a third--Chicken, cola and soy sauce. Major FAIL!  It didn't glaze up like the recipe said and it took WAY TOO LONG and way too much liquid.  So forget about that one!

3-Ingredient Pasta in a Mug!

Ingredients:

 1-2 cups Rigatoni, cooked

1 cup Marinara Sauce (Love Rao’s Tomato and Basil)

1 cup Mozzarella Cheese

Directions:

Preheat oven to 350 degrees. Place several large spoonfuls of marinara sauce into the bottom of a large wide-mouth, oven safe coffee mug. Sprinkle 1-2 tablespoons of grated mozzarella on top. Pour a more tablespoons of marinara over the cheese.

Working in a spiral motion, place the cooked pasta standing up pressed against each other until the cup is filled with pasta. Fill the mug snuggly with pasta so that it will hold its shape after being baked. Top the pasta with enough marinara to cover it. Sprinkle it with the rest mozzarella cheese. Bake for 20 minutes. Once the pasta is baked, place a plate on top of the mug, and then flip it over to unmold the pasta onto the plate.

3-Ingredient Pulled Pork 

Ingredients:

1 pork tenderloin

2 cans of Root Beer

1 bottle of your favorite BBQ Sauce

Directions: 

Sprinkle salt and pepper over tenderloin and sear in a hot skillet to get a nice

brown coating. Pour 2 cans of root beer and bbq sauce in skillet and stir to combine.

Cook tenderloin for 30 minutes, basting every so often with the sauce. Shred and make sandwiches!
