CHARACTERISTICS: The wine is light golden hue in the glass, with aromas of lemon and notes of apricot and white peach. A balanced palate offers fresh citrus fruits on the entry and finishes with layers of stone fruits and green apple. It’s well balanced, with minerality, integrated acidity, and a bright finish.

ACCOMPANIMENT: The wine's bold character makes it an ideal candidate to complement savory poultry and fish dishes, salads and assertive cheeses. Unlike sauvignon blancs that pine for food, Elizabeth Spencer's version also can be savored with no culinary accompaniment.

VINIFICATION: Elizabeth Spencer’s Sauvignon Blanc is made in a certified organic, carbon-neutral winery. After harvest, the fruit was allowed to macerate for several hours in the press. This closely monitored process allowed the juice to extract aromatics and just the right amount of astringency from the gently broken skin, adding to the wine’s intensity and complexity. Once pressed, the juice was fermented in stainless steel in order to showcase the exquisite varietal character. The wine was given “sur lie aging” for a period of time prior to bottling in order to enhance the wine’s aromatics, structure, complexity, and mouth feel.
