Packed with eggs, potatoes and beans, you can add bacon, chorizo, ham or sausage ($1) or cheese, jalapeños or grilled onions (50 cents each). For later-day meals, fill a flour tortilla with grilled chicken, pork in green chile sauce, pork carnitas, carne asada, beef in red chile sauce or shredded beef.
