Beth & Friends & Food: February 13th

It's Girl Scout cookie time and it so happen that they are celebrating their 100th birthday this year. So Jan decided to take your favorite Girl Scout cookies and make some delicious treats with them. 

Samoa Cookie Toffee

INGREDIENTS

2 boxes (7oz) Girl Scout Samoa Cookies

1 1/2 cups butter

1 3/4 cups sugar

3 tablespoons corn syrup 

3 tablespoons water

DIRECTIONS

Place the cookies in a gallon sized zippered plastic bag and smash with rolling pin until crumbled.

Sprinkle half of the crumbles on a small baking sheet lined with foil. 

Cut butter into cubes and place in the 3-quart saucepan over medium heat. Add sugar, water and corn syrup and bring to a boil. 

Attach candy thermometer and let boil until mixture reaches 302 degrees. (Hard Crack Stage). Remove the heat and quickly pour over crumbled cookies, spreading evenly with a spatula or wooden spoon. Top with remaining crumbled Samoas pressing down gently. 

Refrigerate for several hours or overnight. Break into pieces. 

Girl Scout Tagalong Pudding Pie

INGREDIENTS

1 box of Girl Scout Tagalongs

1 small package (3 1/2oz) instant vanilla pudding

1 1/2 cups milk

1/3 creamy peanut butter

Whipped topping or Whipped cream

Chopped peanuts for garnish (optional)

DIRECTIONS

Grind cookies in blender or food processor and press into a lightly greased 8 or 9 inch pie plate. 

Prepare pudding mix using only 1 1/2 cups milk. 

Stir in peanut butter until well combined. Pour into pie shell. 

Freeze for several hours for pie to harden. Keep frozen until ready to serve.

Add whipped topping and chopped peanuts for garnish if desired.
