1 tablespoon red wine vinegar
1 1/2 teaspoons shallots, minced (optional)
1/2 teaspoon mayonnaise
1/2 teaspoon Dijon
1/8 teaspoon salt
Pepper to taste
3 tablespoons olive oil
Combine vinegar, shallots, (if using) mayonnaise, Dijon, salt and pepper. Whisk in oil.
SIDE NOTE: You can double or triple the batch for larger amounts
